Here’s the recipe for the spicy peanut dip we made on 21st July:
2 red chilli
3 cloves of garlic
2 tbsp of palm sugar or brown sugar
3 tbsp of fish sauce
3 tbsp of lime juice
3 tbsp of roasted peanuts

Blend all ingredients.
Add 2 tbsp of warm water

Mix in fresh chopped coriander to serve.
for the fresh spring rolls:  soak rice paper in warm water (add a few drop of rice vinegar) 1at the time for a minute or two. You can use any veg, just slice as thinly as you can. We used peppers, cucumber, mint, coriander, spring onion, and cooked noodles. place a few pieces of each vegetable in the middle of the rice paper, fold in from the opposite sides and then roll up. The rice paper will stick as it dries to hold the roll shape.
